Settle into a plush leather booth for this Chef Series match that combines robust but polished British nostalgia with traditional French luxury. Sally Abé of The Pem, a London fine-dining establishment, will join former colleague and friend Billy Hannigan for three unforgettable lunches and dinners at The Charles Brasserie and Bar. After working together at London’s three Michelin-starred restaurant The Ledbury, this promises to be a wonderful reunion and celebration of their individual styles.
Sally’s skill for modernized British nostalgia will complement Billy’s exquisite French style. The end result is a wonderful, unexpected cuisine that pays tribute to their shared heritage and the amount of expertise they’ve gained since. All in the magnificent setting of The Charles, which features soaring ceilings, clean white tablecloths, and art deco lighting. Rhiann Mead, Charles’ head pastry chef (formerly of Bennelong), will also join Sally and Billy in the kitchen to create an original, flamboyant dessert, the perfect way to round off a night of culinary creation.
